The perfect cake to bake for Mum this Mother’s Day

Mother’s Day is fast approaching and we have the perfect thing to treat mum on her special day. Indulge her sweet tooth with a delicious, rich chocolate cake that is simple to make and tastes amazing! Plus, this excellent cake keeps for up to five days, so she can continue to enjoy a slice of sweetness in the days following the weekend.

Chocolate cake has long been a crowd favourite and there is nothing better than celebrating a special occasion with a thick slice of moist cake, smothered in delicious frosting. Even if you’re not an expert in the kitchen, you will find it easy to whip up this fast and simple cake recipe.

 How to Make It 

The secret to this recipe’s success (and what makes it easier than most for novice bakers) is that it uses oil, not butter. This means that not only do you avoid mucking around creaming butter, you also end up with a super moist cake

What you’ll need

For The Cake

·      1 and ¾ cups plain flour

·      ¾ cup cocoa powder

·      2 eggs

·      1 cup milk

·      2 cups caster sugar

·      ½ cup vegetable oil

·      2 tsp vanilla extract

·      1 and ½ tsp baking powder

·      1 cup boiling water

For the icing

·      ¾ cup butter

·      2 and ½ cups icing sugar

·      ½ cup cocoa powder

·      ¼ cup milk

How to Make It 

Begin by preheating your oven to 180 degrees Celsius and greasing two cake pans with butter.

Sift the flour, cocoa, sugar and baking powder into a large bowl. Use a whisk to combine.

Add eggs, oil, vanilla extract and milk. Whisk well until there are no lumps in the batter.

Add the boiling water and combine. Your batter should now be quite thin – don’t be alarmed! It will all come together.  

Pour batter into your cake pans and bake for 35 minutes or until a skewer inserted comes out clean. Remove from oven and cool for 10 minutes before removing from pan. 

To make your icing, beat your softened butter in a bowl under creamy and pale. Add the sugar and cocoa powder gradually, allowing it to combine completely. Add milk and mix through.

Allow your cake to cool completely before adding a layer of icing to one of the cakes. You may need to cut the top a little to achieve a smooth surface. Place the second cake on top to create two layers. Cover the rest of the cake in a thick layer of icing.

Top with berries, coconut flakes or whatever you like to decorate with. Voila! A beautiful, decadent cake to make mum proud.
